San Remo SR Gluten Free Fettuccine 350g

FETTUCCINE WITH EGGPLANT AND MUSHROOMS
- San Remo Gluten-Free Fettuccine 350g
- 2 tbsp olive oil
- 2 cloves garlic, crushed
- 1 onion, chopped
- 1 medium eggplant, cut into small cubes
- 200g mushrooms, sliced
- 800g can tomatoes
- Black pepper to taste
- Grated/shaved parmesan cheese
- ¼ cup chopped parsley
Heat oil in a pan, add onion and garlic and cook, stirring until soft.
Add eggplant and mushrooms, cook until tender.
Stir in undrained crushed tomatoes with oregano and pepper. Simmer uncovered for about 15 minutes or until sauce thickens.
Meanwhile, cook pasta according to packet directions and drain.
Stir in parsley to the sauce and toss the hot sauce through the freshly cooked pasta and serve immediately topped shaved parmesan cheese.
